A hillside kitchen
A small open-kitchen restaurant on a red-dirt slope above Đà Lạt, where the morning mist lingers on the thatch and the first charcoal is lit by ten. We do one thing well — free-range chicken, slow-grilled over hardwood until the fat melts into the skin.

Free-range hen marinated overnight in mắc khén pepper, lemongrass and wild honey, then turned by hand over the embers for 40 minutes.

A long-simmered chicken broth thrown with purple lá é leaves and green Xiêm chillies — served with fresh bún and forest greens.
